Im not to sure if this will work for the PS5 controller, but for any other conttroller, you could just do this. You can sort this out by going to the steam's big picture mode > library > assetto corsa > manage game > properties > controller configuration, there tick the option which says xbox 360 controller (or untick if it has already been ticked )
