Yours is a slightly different issue. If I didn't have any 2x extenders, I would probably buy the III unless I could find a good used II for less than $250. On the question of 1.4x vs. 2x, the image quality of my 1.4x is far superior to either the EF 2x or EF 2x III that I tested at comparable focal lengths.
I use a 1.4x teleconverter with a EF 70-200 2.8 IS II adapted both on the EOS R and R5 with no issue. The combo works great! I roll with Canon R 1.4xiii and either a 70-200ii or 100-400ii. Both set ups have been amazing. I dont have any experience with the 2x extender though.
I have 2 TC's, a Sigma 1.4x for EF and a Canon 1.4x for RF. Both are used infrequently. I'd recommend a tripod and would not use unless I had to. I view a TC as a "just in case" accessory. Teleconverters can be used to increase the apparent focal length of a lens. A 2x teleconverter (such as the Yongnuo EF 2X III teleconverter) will double the apparent focal length at the expense of two stops of light.
